
I went to the Farmer’s Market yesterday morning, picked up some rhubarb, some HUGE green onions, and asparagus. Bought some chicken, made a “cream” sauce using soy milk and cottage cheese, added some mozzarella. Aside from the asparagus and onions I added some red pepper and shrooms.
With all the cooking I’ve done, it was my first time making a roux, and using soy milk and spelt flour I wasn’t sure if it was going to work… but it was wonderful.I have another couple meals worth as left overs…
