I was browsing some youtube videos the other night and someone made some pecan-crusted tilapia that looked good. I realized I haven’t had fish for awhile (other than seafood out in Vegas last week), so I figured I would make some tonight. I forgot to take any out of the freezer so stopped at the store and ended up getting a nice northern fillet… and then I got the idea to try something other than pecans based on a twitter conversation with someone else. I hit the bulk foods section and picked up some pumpkin seeds.
Yea, it sounds weird… but ya know, it turned out just… too good for words. Had it for dinner tonight along with some roasted portabella mushroom and onion and a side salad with a home made, steak-sauce, salad dressing. All new attempts for me tonight, and they all turned out spendiferiously.

Oh, I’m gonna post the recipe for the fish over on my formerfatdudes.com site later… but here’s the dressing recipe.
The Magic Bullet blender works good for this, otherwise use a container with a lid you can shake up like crazy.
Start with 2 tablespoons red wine vinegar, add 1 rounded tablespoon of brown sugar (I used the Splenda mixed stuff), 1 tablespoon of Worcestershire sauce (my home made stuff is best of course), and about 1/2 teaspoon of coarse or fresh ground pepper. Stir or shake to dissolve the sugar. Then add in 1/2 cup tomato sauce and a tablespoon of extra virgin olive oil and a dash of salt – blend or shake to mix well. It’s best if you chill it a bit before using.
