Been a few days since I’ve posted anything.
Saturday was taken up with paintball. Was a good day, even if we only had a small showing down in Morristown. I tested out the bullet-cam I have. Worked rather well mounted on my barrel. I need to play with the video and figure out how to post it. Maybe. It’s not very exciting, but there’s some larger games coming up, at least now I know it works.
Yesterday was Mothers day. (hi mom!) Had a nice day at the sister’s. I had a “lunch” of 2 or 3 shrimp for a shrimp cocktail. Everyone seemed to like the blackberry cocktail sauce I brought. Later, my brother-in-law and I went to see Star Trek. Was very good. Better than I expected even. And of course leaves a whole lot of doors open for the future.
Today, I packed a lunch… but ended up getting a small Wendy’s chili… ate less than half of it. Tonight, pizza. It could be a couple-time a week thing down the road. It’s easy and I can whip it together with whatever I have on hand for meat and veges.

Chicken Pesto Pizza – the six inch tortilla topped with some pesto from Trader Joe’s, the last of the Hormell deli chicken strips, sweet vadalia onion, sliced green olives, my home-made cheese and some red pepper flakes.
Here’s the one I made last week…

This one is the tortilla topped with a mock-alfredo sauce made mostly from cauliflower, Hormel deli chicken strips, green onion, green olives, cheddar cheese and a few dots of my home-made cheese. I’m working on fixing up the cauliflower alfredo sauce before I publish the recipe. I was only able to eat half of this for dinner. Had 3/4 of the rest for breakfast the next day.
I never did eat the lunch I posted the other day. Ate out Thursday… brought it again Friday and ended up going for Taco Bell pintos and cheese… and today it was the Wendy’s. Maybe I was just getting tired of chicken? Dunno.
That’s one of the things now… when I open something, it lasts for days and days and days. That personal size watermelon I bought just over a week ago; I took a good portion of it when playing paintball last Sunday. Had it with three or four other meals during the week, and took more with to paintball this last Saturday, and have enough for maybe 1-2 more meals. That Hormel chicken, it’s a 6oz package and I used it in four, maybe even five meals. And that’s not even counting that last pizza as two meals.
Living alone, it’s just hard to use stuff up that fast. I could have frozen the chicken I suppose, but it was nice having it on hand for doing a quick meal. And things like the watermelon… well, what else is there to do? So I think my meals are going to involve certain things being used a LOT over a few days, then hopefully I can move on to something else for awhile to keep it mixed up.
I’m getting close to the 280 mark. Which means 40+ pounds gone in about five weeks.
I ordered some calcium chews and a sampler pack from bariatricadvantage.com via the bariatrictv.com website e-store. I’ll pop up some notes bout it when I get them.
I guess that’s bout it for now… I have a 7am meeting for work. Should probably get to bed early.
